    Piri Piri Biltong Mac and Cheese

    Ingredients

    • 250 g Dried macaroni

    • 60 g Unsalted butter

    • 40 g Plain flour

    • 2 tsps Garlic paste

    • 1 tsp Celery salt

    • 2 tsps Chili powder

    • 700 ml Whole milk

    • 200 g Grated cheddar cheese

    • 100 g Grated Gruyere cheese

    • Handful of grated Parmesan cheese

    • Handful of sliced red jalapenos

    • Handful of panko breadcrumbs

    • Handful of chopped piri piri biltong

    Directions

    1. Cook the macaroni according to the package instructions, but subtract 4 minutes. Preheat your oven to 200°C (400°F).

    2. While the macaroni cooks, melt the butter in a separate saucepan. Add the garlic paste, celery salt, and chili powder. Stir for 1 minute.

    3. Reduce heat to low and add the flour, stirring constantly. Gradually whisk in the milk while stirring continuously.

    4. Continue cooking on low heat for 8-10 minutes. The sauce should thicken slightly, but not significantly. Remove from heat.

    5. Stir in the cheddar cheese, Gruyere cheese, salt, and pepper. Add the cooked macaroni, most of the chopped biltong, and most of the sliced jalapeños. Combine well.

    6. Transfer the mixture to an oven-proof dish.

    7. Top the mac and cheese with panko breadcrumbs, grated Parmesan cheese, and the remaining chopped biltong and sliced jalapeños.

    8. Bake in the preheated oven for 20 minutes, or until golden brown on top.
